Vegan Fair Recipes

Here are our recipes for Truro Free Vegan Food Fair - will add photos soon:

Lentil & Butter Bean Bake
Serves 4
8 oz red lentils
1 large onion
1 bay leaf
16 fl oz water
1 teaspoon yeast extract
2 oz cooked butter beans
1 teaspoon smoked paprika
1 tablespoon chopped fresh basil
Sea salt & black pepper to taste
Sprinkle of sesame seeds & nutritional yeast
In a large pan, fry the onion & garlic in a little water for about 5 minutes.
Add the washed lentils, bay leaf, yeast extract & water.
Simmer for about 25 minutes, until the lentils are soft. Remove the bay leaf.
Set oven to 220 C (gas 7) & line an 8 inch tin.
Add the remaining ingredients & either mash together or whizz with hand blender.
Transfer into tin & add topping.
Bake in oven for about 25 minutes, until golden brown.
Suitable for freezing.

Lemon Polenta Cake
Makes 8 portions
3 oz polenta
6 oz natural caster sugar
4 ½  oz ground almonds
1 oz desiccated coconut
1 teaspoon baking powder
Zest of 1 lemon
Juice of  ½  lemon
2 teaspoons ground linseeds
6 oz apple purée
2 oz unbleached icing sugar
Juice of  ½  lemon
Preheat oven to 180C & line a 7 inch tin.
Place all cake ingredients into a bowl & mix well.
Transfer into the tin & bake for 30 minutes.
Sieve the icing sugar into a bowl & stir in the lemon juice.
Pour onto the warm cake & leave to cool.
Suitable for freezing.

Carob Balls
Makes around 16
4 oz chopped dates
2 oz chopped apple or puréed apple
2 fl oz plant milk
2 oz carob powder
1 oz toasted hazelnuts
1 oz desiccated coconut
6 oz porridge oats
½ teaspoon vanilla extract
1/2 tablespoon cinnamon sugar (optional)
Mix the dates, apple (or purée), milk & carob in a pan.
Bring to the boil & then simmer for 5 minutes.
Chop or grind the hazelnuts.
Take the pan off the heat & whizz the date mixture with a hand blender.
Add oats, nuts, coconut, vanilla & spice.
Mix thoroughly, then roll into walnut-sized balls.
Coat in cinnamon sugar.
Leave to cool on baking sheets.
Store in airtight container.
